
CENTENNIAL, Colo. - Penford Food Ingredients has introduced PenGel 8, a fully hydrated non-allergenic modified potato starch gel that improves nutritional value while replicating the favorable aspects of real fat, the company said.
Applications for PenGel 8 include:
- Coarse ground sausages and patties
- Emulsified meats, including hot dogs and bologna
- Chopped and formed meats, including chicken nuggets
- Meat analogues, including sausages, patties, crumble and nuggets.
PenGel 8 is a fat mimetic that maintains tenderness and juiciness in food, and is made from water and modified potato starch, Penford said. PenGel8 is non-GMO, kosher and non-allergenic.
