Penford Food Ingredients Introduces PenGel 8

The fat mimetic is a fully-hydrated, non-allergenic modified potato starch gel that improves nutritional value and replaces fat.


CENTENNIAL, Colo. - Penford Food Ingredients has introduced PenGel 8, a fully hydrated non-allergenic modified potato starch gel that improves nutritional value while replicating the favorable aspects of real fat, the company said.

Applications for PenGel 8 include:

  • Coarse ground sausages and patties
  • Emulsified meats, including hot dogs and bologna
  • Chopped and formed meats, including chicken nuggets
  • Meat analogues, including sausages, patties, crumble and nuggets.

 

PenGel 8 is a fat mimetic that maintains tenderness and juiciness in food, and is made from water and modified potato starch, Penford said. PenGel8 is non-GMO, kosher and non-allergenic.
